Tomac

The Tomac family's vineyards are situated on the slopes of the Plešivica-Okić vineyards, in a beautiful south-facing amphitheatre. The Tomac family has been winegrowing for more than 100 years and owns 9 hectares of vineyards planted with Riesling, Chardonnay, Sauvignon, Yellow Swimmer, Red Veltliner, Blue Pinot and other old Plešivica varieties. All the wines are produced exclusively from grapes from the vineyards' own vines, which are over 80 years old.

The bulk of their offer consists of sparkling wines (about 70 %), still wines and white macerated wines aged in Georgian amphorae - kvevri. Their uniqueness is already evident in their vinification, as they use only oak barrels and clay pottery. All wines are fermented with indigenous, indigenous yeasts. Approximately 50 000 bottles are produced annually.

The production of wine in amphorae is extremely rare, as the crafting of the vessel itself is a true work of art. Each amphora is handmade in the Caucasus. There are only a few true old masters of amphora production, and there are only a dozen winemakers outside the Georgian border who own amphorae and age their wines in them. The Tomac family is one of them. They have a total of 9 amphorae in which they ferment mostly all still white wines and blue pinot.

For the family, winemaking is life, it is the love of nature, the vine and wine as a result of our common strengths. Tomac wines are honest and as such recognisable on the Croatian wine scene and in the world.

In 2018, in collaboration with Italy's best biodynamics teacher Michele Lorenzetti, they started applying biodynamics to all their vineyards, becoming the only biodynamic winery in Croatia. The vineyard and the winery have always worked according to the principles of natural production, and they say that going biodynamic was the best decision of their lives.
